Most commercial icing sugar contains small quantities of anti-caking agents derived from animal sources, such as bone char-filtered cane sugar or cornstarch with animal-derived processing aids. Vegan icing sugar substitutes these with plant-based anti-caking agents (typically gum arabic, tapioca starch, or silica) while maintaining the characteristic fine, powdery texture and sweetness equivalent to traditional powdered sugar.

The ingredient is simply granulated sugar that has been milled to an extremely fine consistency and blended with vegan anti-caking agents. It dissolves readily in liquids and produces smooth frostings, glazes, and dusting finishes indistinguishable from conventional icing sugar.

Culinary Uses

The ingredient is common in vegan baking and pastry work, where it replaces conventional icing sugar in all applications. It performs equivalently in both hot and cold preparations and integrates seamlessly into vegan meringues made with aquafaba or other plant-based foaming agents.
