Couscous is a granular pasta product made from semolina (durum wheat flour) that is rolled into small, uniform pellets and dried. Originating in North Africa, particularly among Berber peoples of the Maghreb region, couscous has been documented for centuries as a staple grain preparation. The tiny spheres—typically 1-2 millimeters in diameter—have a pale golden hue and a slightly nutty flavor. Modern couscous production involves mixing semolina with water and sometimes additional flours, then forcing the dough through a mill that creates the characteristic granules, which are then dried to achieve shelf stability.

The most common type is regular (or medium-grain) couscous, though pearl (Israeli) couscous features larger pellets and requires longer cooking, while instant couscous has been pre-steamed and reconstitutes with boiling water in minutes.

Culinary Uses

Couscous serves as a foundation grain in North African, Mediterranean, and Middle Eastern cuisines, functioning as both a neutral base and a vehicle for bold, aromatic spices. It is traditionally steamed above simmering stews in a specialized pot called a couscoussier, absorbing vapors and flavors. Beyond this classic preparation, couscous appears in grain bowls with roasted vegetables, legumes, and proteins; cold salads dressed with olive oil, lemon, and fresh herbs; and pilafs enriched with nuts and dried fruits. Its fine texture and mild taste allow it to pair seamlessly with spiced meat tagines, vegetable braises, and robust herb-based sauces. The grain cooks quickly and absorbs liquids readily, making it versatile for both traditional and contemporary applications.
