Channa dhal (also spelled chana dal or Bengal gram dhal) is a split legume derived from the black chickpea (Cicer arietinum var. nigra), native to the Indian subcontinent. It consists of the inner yellow kernel of the small black chickpea, split and dried into uniform, lens-shaped granules approximately 4-6mm in diameter. The dhal has a mild, slightly nutty flavor and creamy texture when cooked, with a firmer bite compared to other dhals. Channa dhal is distinct from white chickpea (kabuli chana) and is a staple protein source in Indian cuisine.

Channa dhal is prized for its versatility and relatively quick cooking time compared to whole legumes. The splitting and removal of the husk accelerates hydration and softening, making it practical for daily cooking across Indian households.

Culinary Uses

Channa dhal is fundamental to Indian cooking, appearing in both savory and sweetened preparations.
