Apples are first pressed to extract juice, which undergoes alcoholic fermentation via natural yeasts or added yeast cultures to produce cider. This cider is then acetic acid fermentation, typically with the bacterium Acrobacter aceti, converting the alcohol into acetic acid. The resulting liquid contains 4–6% acetic acid by volume, along with trace minerals, amino acids, and pectin. Cider vinegar ranges in color from pale golden to deep amber, with a complex, fruity-tart flavor profile that balances sweetness with piquant acidity. The presence of "the mother"—a living culture of acetic acid bacteria—characterizes unpasteurized, raw varieties, which retain enzymatic properties absent in filtered or heated versions.
