Unlike firmer tofu varieties, silken tofu is produced by coagulating soy milk directly in its container without pressing out excess whey, resulting in a delicate, smooth curd with a high moisture content (approximately 80-90% water). The texture is creamy and homogeneous, ranging from pale cream to off-white in color. Silken tofu has a mild, subtle soy flavor and is less dense than regular tofu, with a custard-like consistency that breaks easily under pressure.
The production process involves grinding soaked soybeans, boiling the soy milk, and adding coagulants (typically nigari, gypsum, or glucono delta-lactone) directly to the milk in sealed containers, where it sets without being cut or pressed. This method preserves the silky texture and contributes to its characteristic delicate mouthfeel.
Culinary Uses
Silken tofu is prized in East Asian cuisines for its smooth, custard-like consistency and is often used in soups, particularly miso soup (misoshiru) and hot-and-sour soup, where it adds richness without requiring cooking. It is also blended into desserts, smoothies, and creamy dressings, serving as a dairy-free thickening agent.
