When cooked, they maintain their firm texture and develop a rich, mildly nutty taste. The variety is believed to have been domesticated in Mexico and is now cultivated widely throughout Latin America, the Caribbean, and the United States.

Black turtle beans are distinguished from other bean varieties by their small size (approximately 8-10mm long), uniform dark coloration, and relatively quick cooking time compared to larger bean varieties. They contain minimal amounts of the oligosaccharides that cause digestive distress in some legume consumers.

Culinary Uses

Black turtle beans are central to Mexican, Cuban, and Brazilian cuisines. In Mexico, they are traditionally served as frijoles refritos or frijoles negros—cooked and either mashed or left whole, often seasoned with garlic, cumin, and chiles. Cuban black beans, typically simmered with sofrito, garlic, and spices, are served as an essential accompaniment to rice. They are also featured in soups, stews, rice dishes, bean salads, and burrito fillings. Their mild flavor and creamy texture make them suitable for both savory applications and certain traditional desserts in Latin American cooking. Proper soaking reduces cooking time, though black turtle beans can be prepared without soaking if cooked longer.
