These noodles originate from East and Southeast Asia, particularly China and Vietnam, and have become foundational across Asian cuisines. The noodles are typically 1-2mm in diameter and range from pale white to slightly translucent when raw. When cooked, they become soft and slippery with a delicate, slightly sweet flavor and a gelatinous texture that readily absorbs surrounding flavors.

The production process involves extracting starch from mung beans, mixing it with water to form a dough, and then extruding or pressing the dough through fine holes to create thin strands. These strands are then dried, which gives them their characteristic brittle, glass-like appearance.
