Originating in East and Southeast Asia, particularly China and Vietnam, these noodles are produced by extruding mung bean starch paste through fine holes and then drying the resulting strands. The noodles are characteristically clear to slightly opaque in their uncooked state, becoming even more translucent when soaked or cooked, with a slippery, slightly chewy texture. They have a subtle, neutral flavor that readily absorbs the tastes of accompanying sauces and broths.

Bean threads are gluten-free and are distinguished from other Asian noodles by their starch source rather than grain flour. They are available in various thicknesses, from very fine to wider ribbon-like versions, and the quality can vary significantly between producers based on the purity of the mung bean starch used.

Culinary Uses

Bean threads are central to Southeast Asian, East Asian, and increasingly Pan-Asian cuisines. Their neutral flavor and delicate texture make them ideal for both hot soups and cold salads, where they absorb dressing flavors readily. Bean threads are typically soaked in warm water for 5-15 minutes to soften before use in most dishes, though some recipes call for direct addition to boiling broths. They cook very quickly and are often used as a textural contrast ingredient rather than as a primary starch component. Their translucent appearance also makes them valued for aesthetic presentation in elegant dishes.
