bag of ice

OtherYear-round. Commercial ice is produced continuously and is available at all times through retail and food service suppliers.

Ice contains no nutritional value as it is pure water in solid form. Its primary function is thermal and textural rather than nutritional.

About

Ice is frozen water (H₂O in solid crystalline form) produced commercially through mechanical freezing or naturally harvested. Commercial ice is manufactured by freezing purified or filtered water in large blocks or as individual cubes and is used extensively in food service, beverage preparation, and food preservation. Ice varies in crystal structure and purity depending on production method: clear ice results from slow freezing of purified water, while cloudy ice forms from rapid freezing of tap water containing dissolved minerals and air.

Culinary Uses

Ice serves essential functions in culinary applications across beverage and food preservation contexts. It is fundamental to cocktail and mixed drink preparation, where it chills liquids, controls dilution through controlled melting, and provides textural elements in frozen beverages such as daiquiris and frozen margaritas. In food service, ice maintains proper temperatures for seafood and produce display, cools dishes during plating, and serves as a base for shellfish service. Ice is also used in the preparation of granitas, sorbets, and frozen desserts, as well as in thermal shock techniques in modern cuisine.
