Asiago is a hard, aged cheese produced in the Veneto region of northern Italy, with origins dating back to the 13th century in the Asiago plateau. The cheese is made from cow's milk and develops a pale golden to straw-colored paste with a natural rind that ranges from smooth to granular depending on age. Asiago is produced in two main styles: Asiago Pressato (lightly pressed, aged 20-30 days, mild and creamy) and Asiago d'Allevo (aged a minimum of 1 year, significantly harder and more crumbly with complex, sharp, nutty characteristics). The aging process develops distinctive tyrosine crystals that create a slightly gritty texture, particularly pronounced in the aged d'Allevo variety.
Culinary Uses
Asiago serves multiple culinary functions depending on its age and style. Young Asiago Pressato is sliced for sandwiches, cheese boards, and as a table cheese with mild, buttery notes. Aged Asiago d'Allevo is grated over pasta dishes, risottos, soups, and polenta, where its sharp, complex flavor and slightly granular texture provide depth and umami.
