angostura bitters®
Angostura bitters are used in minute quantities and provide negligible nutritional content; their primary function is flavoring rather than nutritional contribution. The alcohol content (45% ABV) is largely eliminated through evaporation during use in hot preparations.
About
Angostura bitters is a highly concentrated alcoholic flavoring essence produced in Trinidad and Tobago since 1824, derived from a proprietary blend of spices, herbs, and roots. The exact formula remains a closely guarded trade secret, though it is known to contain gentian root, cinnamon, clove, cardamom, nutmeg, and other botanicals macerated in alcohol and water. The resulting liquid is deep brown to mahogany in color with an intensely aromatic, complex flavor profile combining bitter, spicy, and slightly sweet notes. Its viscosity and potency require minimal quantities—often measured in dashes—to impart profound flavor to beverages and dishes. The product is distinguished by its iconic narrow bottle with an oversized label, a design that has remained essentially unchanged for nearly two centuries.
Culinary Uses
Angostura bitters is primarily employed as a bartender's essential in classic cocktails, where a single dash or two transforms drinks such as the Manhattan, Old Fashioned, and Pink Gin by adding complexity and balancing sweetness. Beyond cocktails, these bitters enhance culinary applications including sauces, marinades, desserts, and savory dishes; a few drops can deepen the flavor of beef stews, chocolate preparations, or custards. The bitters are also traditionally used in carbonated beverages and colonial-era punches. Their primary function is as a flavor bridge—amplifying existing flavors and adding subtle bitterness that creates depth without overwhelming delicate ingredients.
