About

Angel hair pasta, known as capelli d'angelo in Italian, is an extremely thin variety of long pasta, typically measuring 0.75-1 mm in diameter. Like all dried pasta, it is traditionally made from durum wheat semolina and water, extruded through dies and dried. This pasta style originated in Italy but is produced globally. Vermicelli, a similar extremely thin pasta, is a related product found across Mediterranean, Asian, and Middle Eastern cuisines, though Asian vermicelli may be made from rice flour or mung bean starch rather than wheat. The primary distinction lies in their slenderness—angel hair is among the finest dried pasta forms available, requiring minimal cooking time (typically 4-6 minutes) due to its high surface-area-to-volume ratio.

Culinary Uses

Angel hair pasta is prized for its delicate texture and rapid cooking time, making it ideal for light, quick preparations and broth-based dishes. It is particularly suited to thin, oil-based or cream sauces that cling easily to its thin strands, and appears frequently in Italian seafood pastas, Asian noodle soups, and light vegetable preparations. The pasta's fine structure absorbs flavors efficiently and cooks evenly, though care must be taken to avoid overcooking, which results in mushiness. It pairs exceptionally well with agile sauces containing garlic, olive oil, fresh herbs, and delicate proteins such as shellfish or white fish.
