and drained fettuccine

GrainsYear-round; dried fettuccine is a shelf-stable pantry staple, while fresh fettuccine is increasingly available year-round through refrigerated retail distribution.

Fettuccine is a good source of carbohydrates and provides protein, particularly when made with eggs. Enriched dried varieties contain added B vitamins (thiamine, riboflavin, niacin) and iron.

About

Fettuccine is a flat, ribbon-shaped pasta originating from the Emilia-Romagna region of Italy, traditionally made from durum wheat semolina and eggs. The name derives from the Italian word "fetta" (ribbon or strip), referring to its characteristic width of approximately 6-8mm. The pasta is typically 30-40cm in length and features a slightly rough, porous surface due to bronze-die extrusion (al bronzo) in artisanal production, allowing sauces to adhere more effectively than smooth, industrial varieties. Fresh fettuccine requires only 2-3 minutes of cooking, while dried versions require 8-12 minutes. The drained state refers to the pasta after cooking and straining, ready for sauce application or further preparation.

Drained fettuccine, having been cooked to al dente firmness and excess moisture removed, becomes the foundation for numerous Italian and contemporary dishes where it serves as a neutral, starch-based vehicle for various sauces and proteins.

Culinary Uses

Drained fettuccine serves as the primary component in classic preparations such as Fettuccine Alfredo, where it is tossed with butter, Parmigiano-Reggiano, and black pepper, and Fettuccine Bolognese, paired with slow-cooked meat ragù. It is equally suited to light preparations with olive oil and garlic (aglio e olio variations), cream-based sauces, seafood accompaniments, and tomato-based dishes. The ribbon width provides superior surface area for sauce adhesion compared to thinner pasta varieties. Drained fettuccine can be finished with sauces tableside, incorporated into baked pasta dishes, or briefly reheated in sauce before service. It pairs well with both delicate and robust sauces and is amenable to both traditional Italian and contemporary fusion applications.
