Molasses is a thick, dark byproduct of sugar refining, produced during the crystallization of sucrose from sugarcane or sugar beets. The liquid remaining after sugar crystals are extracted undergoes multiple boiling cycles, each producing molasses of varying color and intensity—from light (first molasses) to dark (second and third molasses), with blackstrap being the final, most mineral-rich extraction.

Molasses exhibits a complex flavor profile combining sweetness with deep, slightly bitter notes of caramel, burnt sugar, and subtle spice. The viscosity ranges from pourable to thick and syrupy depending on temperature and grade, with darker varieties providing stronger, more robust flavor compounds derived from the extended processing stages.

Molasses serves as both a sweetener and flavor agent across numerous culinary applications.
