Ñame, known in English as yam, refers to starchy tubers of the genus Dioscorea, native to West Africa and cultivated throughout tropical and subtropical regions worldwide. The plant produces underground tubers that vary in size from small finger-like roots to large bulbous forms weighing several kilograms. Ñame tubers have rough, bark-like skin ranging in color from white to brown to purple-black, with white, cream, or purple flesh inside depending on variety. The flavor is mild, slightly sweet, and starchy, with a texture that becomes creamy when cooked. Major cultivated species include Dioscorea cayenensis (yellow guinea yam) and Dioscorea alata (purple yam), each with distinct culinary characteristics.
