Maraschino cherries are preserved fruit products made from fresh cherries that have been pitted, bleached, and preserved in a sweetened brine or syrup, often with added almond flavoring (marasca essence). Despite their name, traditional maraschino cherries bear little resemblance to the original Marasca cherries of the Dalmatian coast; modern commercial versions are typically produced from light-colored cherry varieties such as Napoleon or Royal Ann cherries. The fruit is blanched to remove tannins and anthocyanins, then treated with food colorings—most commonly red dyes—and stabilizers to achieve their characteristic bright appearance and shelf-stable quality.

The finished product has a glossy, translucent appearance with a firm yet tender texture and a distinctly sweet, somewhat perfumed flavor profile. Modern maraschino cherries are mass-produced through industrial preservation methods and are widely available both with and without stems, in various sizes, and in red, green, or maraschino (original colorless) variants.

Culinary Uses

Maraschino cherries function primarily as a garnish and decorative element in cocktails, desserts, and prepared foods, particularly in American cuisine. They are famously used as a garnish for classic cocktails such as the Manhattan, Martini, and Daiquiri, and as a topping for sundaes, cream pies, and glazed cakes. Beyond garnishing, they are occasionally incorporated into fruit salads, served as a cocktail accompaniment, or used in vintage recipes such as retro fruit salads and molded gelatin desserts. Their high sugar content and mild, artificial flavor make them most suitable as a visual accent rather than a primary ingredient.
