It is produced by fermenting and distilling the juice and crushed pits of wild or cultivated sour cherries (Prunus mahaleb or similar species), resulting in a potent brandy typically bottling at 40–50% alcohol by volume. The spirit is characteristically colorless and possesses a distinctive almond-tinged cherry aroma derived from the prussic acid (hydrogen cyanide in minute, safe quantities) naturally present in cherry pits, balanced with subtle sweetness and dry finish. Traditional production involves maceration of fruit and pits followed by distillation, with aging sometimes occurring in glass or earthenware vessels rather than wood to preserve clarity.

Culinary Uses

Kirsch functions as both an aperitif and a culinary ingredient, valued for its ability to enhance desserts and fruit dishes without adding color or excessive sweetness.
