Caster sugar, also known as superfine sugar or castor sugar, is a granulated sucrose sweetener with exceptionally fine crystals, finer than standard granulated sugar but coarser than powdered sugar. Produced through crystallization of sugar cane or sugar beet juice, caster sugar undergoes additional processing to achieve its characteristic fine texture, typically with grain sizes between 0.3–0.5 mm.
