Silken tofu is a soft, custard-like form of tofu produced by coagulating soy milk without pressing out the whey, resulting in a delicate curd structure that retains high moisture content. Unlike firm or extra-firm tofu varieties, silken tofu has a smooth, creamy texture and pale ivory color. Lite silken tofu is a reduced-calorie version, achieved through lower soy milk solids content while maintaining the characteristic silken texture. This variety originated in East Asia, particularly in China and Japan, where soybeans (Glycine max) are cultivated, processed into milk, and then curdled with nigari (magnesium chloride) or gypsum (calcium sulfate) to form the delicate curd matrix.

The texture of lite silken tofu is notably custard-like, with a subtle, mild soy flavor that is less pronounced than firmer tofu varieties. It jiggles slightly when moved and requires careful handling during preparation. The pale color and neutral taste make it highly adaptable to both savory and sweet applications.

Lite silken tofu is primarily employed in applications where smoothness and creaminess are desired rather than structural integrity. It serves as a key ingredient in Asian desserts, smoothies, soups, and blended sauces, where its delicate texture creates a silky mouthfeel. In Japanese cuisine, it appears chilled (hiyayakko) or in miso soup (tofu-no-miso-shiru), while in modern fusion cooking it functions as a dairy substitute in creamy dressings, puddings, and plant-based custards. Due to its fragility, lite silken tofu is best used in blended preparations or left largely intact in bowls rather than stir-fried or subjected to high-heat cooking.
