Walnuts (Juglans regia) are the edible seeds of the walnut tree, native to Central Asia and now cultivated worldwide, particularly in California, China, and Europe. The kernel is encased in a hard, wrinkled shell and features a distinctive brain-like appearance with distinctive ridges and lobes. The flavor is rich, slightly earthy, and mildly bitter, with a buttery texture. Hazelnuts (Corylus avellana), also called filberts, are the nuts of the hazelnut shrub, native to temperate regions of the Northern Hemisphere. Hazelnuts are smaller and rounder than walnuts, with a smoother shell and a sweeter, more delicate flavor profile with subtle cocoa undertones. Both varieties are valued for their nutritional density and culinary versatility.

Culinary Uses

Walnuts are used extensively in both sweet and savory applications: in baking (cookies, breads, brownies), as toppings for salads and grain bowls, ground into nut butters, and as key ingredients in Middle Eastern and Mediterranean dishes such as muhammara and walnut-crusted meats. They are also pressed for walnut oil, used in vinaigrettes and finishing oils. Hazelnuts feature prominently in European cuisine, particularly in desserts (chocolate hazelnut spreads, pralines, tortes), baked goods, and as garnishes for vegetables and fish. Both nuts may be roasted to intensify flavor, chopped for textural contrast, or processed into flours for gluten-free baking applications.
