Fortified red wines contain resveratrol and other polyphenolic antioxidants from the grape skins, though in higher alcohol concentration than table wines. They are calorie-dense due to both residual sugars and elevated alcohol content.

Fortified red wine is red wine to which distilled spirits (typically brandy) have been added to increase alcohol content, generally bringing it to between 15–22% ABV. The fortification process originated in Portugal and Spain during the 17th century as a method of preservation during long sea voyages. The added spirits halt fermentation, creating residual sweetness and a more stable product with enhanced aging potential. Common fortified red wines include Port (Portuguese), Madeira, and various Spanish and Italian varieties. The fortification fundamentally alters the flavor profile, creating deeper complexity, richer mouthfeel, and stronger tannin structure compared to unfortified wine.

Fortified red wines exhibit higher alcohol warmth, concentrated fruit character, and often notes of dried fruit, caramel, leather, and spice depending on aging and production methods. Vintage Port, Tawny Port, and Ruby Port represent different styles with varying oxidative aging profiles, while Madeira undergoes controlled oxidation as part of its production.

Culinary Uses

Fortified red wines serve both as aperitifs and cooking ingredients across European cuisines. In the kitchen, they are used to deglaze pans, enrich sauces for meat dishes (particularly beef stews and braises), and flavor reductions. A 100 ml measure (as in the user's specification) is typical for deglazing a pan or enriching a single-portion sauce. Port is traditionally paired with cheese and desserts, while fortified wines in general complement game, venison, and richly prepared meats. The alcohol content makes them suitable for flambing and flambéed dishes, where the spirits burn off while imparting complexity.
