Zesty Grilled Veggies

This simple, yet delicious, side dish is rich in vitamin C from the peppers. And as a bonus, the red peppers also provide vitamin A.

Ingredients

  • zucchini
    cut diagonally into ½-inch-thick slices
    4 medium
  • red peppers
    cut into ½-inch-wide strips
    3 unit
  • yellow peppers
    cut into ½-inch-wide strips
    3 unit
  • Kraft Zesty Italian dressing
    ¼ cup
  • Kraft 100% grated Parmesan cheese
    ¼ cup

Method

Preheat the grill to medium-high heat (about 400°F) and allow it to heat for 5-10 minutes until the grates are hot.

Arrange the zucchini slices, red pepper strips, and yellow pepper strips on a large plate or cutting board.

Drizzle the Kraft Zesty Italian dressing evenly over all the vegetables and toss gently to coat thoroughly.

Place the vegetables directly on the preheated grill grates in a single layer, arranging them so they have good contact with the heat.

Cook for 3-4 minutes until the vegetables develop grill marks and soften slightly, then flip each piece carefully with a spatula or tongs.

Continue cooking for another 3-4 minutes until the vegetables are tender and have charred spots on both sides.

Transfer the grilled vegetables to a serving platter and sprinkle the Kraft 100% grated Parmesan cheese evenly over the top while the vegetables are still warm.
