Thai Peanut-drizzled Wilted Spinach

It’s strange. I don’t like peanut butter, but a good spicy Thai peanut sauce is one of my favorite things. I love it drizzled on just about everything.

  • Thai spinach

Method

Rinse the Thai spinach thoroughly under cool running water, then drain well and set aside.

Heat a wok or large skillet over medium-high heat until very hot, about 1-2 minutes.

Add the Thai spinach to the hot wok and stir constantly until the leaves wilt completely, about 1-2 minutes.

Transfer the wilted spinach to a serving plate, arranging it in an even layer.

Drizzle the warm spinach generously with peanut sauce, ensuring even coverage across the top.

Serve immediately while the spinach is still warm, optionally garnished with crushed roasted peanuts if desired.
