Ingredients

  • x 16 oz package extra-firm
    water-packed tofu
    1 unit
  • your favorite sauce or dressing (see below)

Remove the tofu block from its packaging, wrap it in several layers of paper towels or a clean kitchen towel, and press it under a heavy object for at least 20 minutes to expel excess moisture.

Slice the pressed tofu into thin, even slices approximately 1/4 inch thick, cutting lengthwise to produce broad, deli-style pieces.

Prepare a marinade by whisking together soy sauce, liquid smoke, garlic powder, smoked paprika, onion powder, a small amount of maple syrup or agave, and black pepper in a shallow dish.

Submerge the tofu slices in the marinade, ensuring each slice is fully coated, then cover and refrigerate for at least 30 minutes, or up to overnight for deeper flavor.

Heat a lightly oiled non-stick skillet or grill pan over medium-high heat until hot, then arrange the marinated tofu slices in a single layer.
