Rinse the dried lentils under cold water until the water runs clear, then drain well.

Heat the oil in a large pot over medium heat, then add the rinsed lentils and stir for 1-2 minutes until lightly toasted.

Pour in the water and bring to a boil, then reduce heat to medium-low and simmer the lentils for 15 minutes until they begin to soften.

Add the rinsed rice and salt to the pot, stirring gently to combine with the lentils and cooking liquid.

Bring the mixture back to a boil, then reduce heat to low, cover the pot with a tight-fitting lid, and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed.
