Simple Yucca Simmer

Method

Peel the yucca root by cutting away the thick, bark-like skin with a sharp knife, then remove the thin pink layer underneath. Rinse the peeled yucca under cold water and cut it into 2-inch chunks, discarding any fibrous core.

Fill a large pot with water and bring it to a boil over high heat. Add the yucca chunks and salt, then return to a boil.

Reduce heat to medium and simmer the yucca until tender and easily pierced with a fork, about 15-20 minutes. Drain well in a colander.

Gently toss to combine, being careful not to break apart the yucca pieces.

Season with ground black pepper and scatter the chopped chives over the top. Taste and adjust seasoning as needed before serving warm.
