Scrub the large baking potatoes under cold running water to remove any dirt, then pat dry thoroughly with paper towels.

Cut each potato lengthwise into quarters, then cut each quarter into 1/2-inch thick sticks, aiming for consistent sizing so they cook evenly.

Place the cut potatoes in a large bowl and drizzle with 2 tablespoons vegetable oil, then toss until all pieces are lightly coated.

In a small bowl, combine paprika, ground cumin, coarse salt, and cracked black pepper.

Sprinkle the spice mixture over the oiled potatoes and toss well to distribute the seasonings evenly.

Spread the seasoned fries in a single layer on the prepared baking sheet without crowding, arranging them cut-side down for even browning.

Bake for 30–40 minutes, stirring halfway through, until the fries are golden brown and crispy on the outside with tender interiors.
