Preheat the oven to 400°F (200°C).

Cut peeled potatoes into 1-inch cubes and place in a large mixing bowl.

Add butter and olive oil to the bowl with potatoes.

Combine dried oregano, salt, garlic powder, and pepper in a small bowl.

Sprinkle the herb mixture over the potatoes and toss until all pieces are evenly coated with oil and seasonings.

Transfer the seasoned potatoes to a roasting pan, spreading them in a single layer.

Roast in the preheated oven for 35-40 minutes, stirring halfway through, until the potatoes are golden brown and tender when pierced with a fork.
