Sweet rice

Sweet Rice is a rice pudding that can be served hot or cold.

Ingredients

  • c. rice<br>
    1 1/2 unit
  • salt<br>
    1 tsp
  • scoop (1/8 tsp) saffron (expensive but worth it!)<br>
    1 large
  • c. sugar (or
    if diabetic, Splenda equivalent)<br>
    1/2 unit
  • c. raisin (or currants)<br>
    1/2 unit
  • -1/2 c. slivered almonds (toasted if you prefer)<br>
    1/4 unit

Method

Rinse 1 cup of long-grain white rice under cold water until the water runs clear to remove excess starch.

In a medium saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt, then bring to a boil over medium-high heat.

Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let the rice simmer until all liquid is absorbed.

Remove the saucepan from heat and let the rice steam, still covered, to finish cooking and become fluffy.

In a small bowl, whisk together 2 tablespoons of honey or sugar with 1 tablespoon of butter and 1 teaspoon of vanilla extract until combined.

Fluff the cooked rice with a fork, then pour the sweetening mixture over the rice and gently fold until evenly coated.

Taste the sweet rice and adjust the sweetness by adding more honey or sugar as desired, then fold gently to incorporate.
