Zesty Italian Sausages

Ingredients

  • Two-tomato Relish (see directions below)

  • 1/4 cup
  • chopped fresh or 1/2 teaspoon dried oregano leaves
    2 teaspoons
  • fully cooked mild Italian sausages (1 pound)

  • bratwurst buns
    split

Method

Prepare the two-tomato relish by combining fresh diced tomatoes, sun-dried tomatoes, minced garlic, and a splash of olive oil in a bowl; season with salt and pepper and let sit while preparing the sausages.

Heat a large skillet or grill pan over medium-high heat, lightly brushing with oil to prevent sticking.

Place the fully cooked Italian sausages in the hot skillet and cook, turning occasionally, until browned and heated through.

In a small bowl, whisk together the Dijon mustard and oregano leaves to create a seasoning paste.

Toast the split bratwurst buns cut-side down in the skillet or on a grill until lightly golden and warmed through.
