Ingredients

  • recipe tofu Cutlets
    1 unit
  • good-quality rye bread
    8 slices
  • fresh-pack sauerkraut
    1 cup
  • plain yogurt or Mayonnaise
    1/4 cup
  • 2 tablespoons

Method

Prepare the tofu cutlets according to package directions if using prepared ones, or press and pan-fry fresh tofu cutlets until golden brown on both sides.

Drain the sauerkraut in a colander and gently squeeze out excess liquid with a clean kitchen towel to prevent the sandwich from becoming soggy.

Combine the plain yogurt or mayonnaise with catsup in a small bowl, stirring until well blended to create a spread.

Lay out 4 slices of rye bread on a clean work surface and spread each slice evenly with the yogurt-catsup mixture.

Layer the cooked tofu cutlets onto the spread slices, then top each with approximately 1/4 cup of drained sauerkraut.

Top each sandwich with the remaining 4 bread slices, spread-side down to enclose the filling.

Cut each sandwich diagonally to create two triangles for easier handling and presentation.
