Rub the curry and black pepper mixture evenly over both sides of each pork chop, pressing gently so the spices adhere.

Preheat a large skillet over medium-high heat, then lightly oil it with a small amount of cooking oil.

Place the seasoned pork chops in the hot skillet and sear for 4-5 minutes per side until golden brown and cooked through, working in batches if needed.
