Sweet Potato Soup (Keith's Version)

Ingredients
- sweet potatoes
- vegetable oiltbsp
- onion, finely choppedsmall
- garlic, mincedcloves
- minced ginger (or 1 tsp ground ginger)tbsp
- mild curry pastetsp
- vegetable or chicken stockcups
Method

Peel and cut sweet potatoes into 1-inch cubes; set aside.

In a large saucepan, heat oil over medium heat; cook onion, garlic, ginger and curry paste, stirring occasionally, for 3 minutes or until softened.

Add sweet potato; stir for 1 minute until coated.

Add stock and bring to a boil; reduce heat, cover and simmer for 10 minutes or until soft.

Puree soup in a blender and enjoy!
