Chocolate Smunchies

The first time you might want to use just part of the pudding for smunchies. Some whipped topping recipes and mixes freeze OK for a few days but haven't tested any longer than a week.

Prepare the chocolate pudding by whisking the pudding mix with non-fat milk according to package directions until smooth and thickened, then let it cool slightly.

Spread a thin layer of peanut butter on one side of each graham cracker square using a knife or spreader.

Drizzle or spread a small amount of the prepared chocolate pudding over the peanut butter layer on each cracker.

Top each chocolate-covered cracker with a dollop of low-calorie whipped topping.

Arrange the finished Chocolate Smunchies on a serving platter and serve immediately, or refrigerate until ready to serve.
