Poke (poe-kay) is kind of raw fish salad popular in Hawaii. There are many different kinds of poke utilizing different kinds of fish and other ingredients. It's important to get as fresh a fish as possible as it is eaten raw.

Cut the fresh raw tuna into ½ inch cubes, ensuring pieces are uniform in size for even marinating and consistent texture.

Place the cubed tuna in a medium mixing bowl and add the soy sauce, stirring gently to coat all pieces evenly.

Drizzle sesame oil over the tuna to taste, starting with a small amount and adjusting according to preference for nutty flavor and richness.

Add Mongolian fire oil to taste, beginning conservatively as it builds heat, and mix gently to distribute the spice throughout the poke.

Fold in the mayonnaise carefully until it coats the tuna pieces and creates a creamy, spiced paste without breaking apart the delicate fish.
