Combine the bay leaves, cardamom, cumin, and coriander in a dry skillet over medium heat and toast for 1-2 minutes until fragrant, then remove from heat.

Transfer the toasted spices and bay leaves to a small bowl and pour the boiling water over them, allowing them to steep and infuse their flavors.

Strain the spiced water through a fine mesh sieve into a medium heavy-bottomed saucepan, discarding the whole spices and bay leaves.

Add the soymilk and a pinch of salt to the spiced liquid in the saucepan, stirring to combine, then bring the mixture to a gentle simmer over medium heat.

Reduce the heat to low and stir in your sweetener of choice, stirring continuously until fully dissolved.
