Combine the bay leaves, cardamom, cumin, and coriander in a dry skillet over medium heat and toast for 1-2 minutes until fragrant, then remove from heat.

Transfer the toasted spices and bay leaves to a small bowl and pour the boiling water over them, allowing them to steep and infuse their flavors.

Strain the spiced water through a fine mesh sieve into a medium heavy-bottomed saucepan, discarding the whole spices and bay leaves.

Add the soymilk and a pinch of salt to the spiced liquid in the saucepan, stirring to combine, then bring the mixture to a gentle simmer over medium heat.

Reduce the heat to low and stir in your sweetener of choice, stirring continuously until fully dissolved.

Allow the mixture to simmer uncovered on low heat, stirring frequently to prevent scorching, until the liquid has reduced by roughly half and has thickened noticeably.

Test the consistency by dragging a spoon across the bottom of the pan; if it leaves a clear path that fills in slowly, the condensed soymilk is ready.
