Sour mix
Sour mix is a mixer used in many cocktails, notably the Long Island Iced Tea family. It is made from approximately equal parts lemon and/or lime juice and simple syrup and shaken vigorously with ice.

Ingredients
- One cup of sugar1 unit
- One egg white1 unit
- Two cups of water1 unit
- Two cups of lemon juice1 unitpreferably freshly squeezed

Combine equal parts fresh lemon juice and fresh lime juice in a measuring cup, straining out any seeds or pulp.

In a small saucepan, combine equal parts granulated sugar and water to prepare a simple syrup. Heat over medium heat, stirring constantly until the sugar fully dissolves.

Remove the simple syrup from heat and allow it to cool completely to room temperature before combining with the citrus juice.

Combine the cooled simple syrup and the citrus juice in a mixing bowl or large measuring cup, using a 1:1 ratio of syrup to citrus juice.

Taste the mixture and adjust the balance by adding more citrus juice for increased tartness or more simple syrup for additional sweetness.

Whisk or stir the sour mix thoroughly until all components are fully combined and the mixture is uniform in consistency.
