This recipe came from an estate sale. I obtained it when I purchased the family collection from the Galvan Estate in Fort Worth, Texas in 1986.

Combine the chopped fresh peach, chopped tomato, chopped green onions, chopped fresh mint, and chili powder in a medium bowl.

Stir gently until all ingredients are evenly distributed and the flavors begin to meld together.

Taste and adjust seasoning with additional chili powder if desired for more heat.

Let the salsa rest for 5 minutes at room temperature to allow flavors to develop, then serve immediately or refrigerate until ready to serve.
