Ingredients

- grated white meat of 1 large or 2 small coconuts1 unit

Method

Rinse the uncooked rice under cold running water until the water runs clear, then drain well in a colander.

Pour 500 ml of water into a large saucepan and bring to a boil over high heat.

Add the drained rice and a pinch of salt to the boiling water, stir once, and return to a boil.

Reduce heat to low, cover the saucepan with a tight-fitting lid, and simmer for 12-15 minutes until the rice is nearly cooked and most of the water is absorbed.

Add the grated coconut meat to the partially cooked rice and stir gently to distribute evenly throughout.

Cover the saucepan again and continue simmering over low heat for 3-5 minutes until the rice is fully tender and the coconut is heated through.
