Sesame Noodle Salad
The salad recipe reminds me of those quiet and peaceful Sunday brunches at the local corner bakery and is an attempt to duplicate the bakery's original, secret recipe.

- or more of finely chopped fresh cilantro1 cup
- 1/2 cup
- and 1/2 cups of thinly sliced fresh carrots1 unit

- Approximately 1 cup olive oil as an additional supplement1 unit
- or 1 lb. of angel hair pasta noodles16 oz
Method

Bring a large pot of salted water to a boil. Add the angel hair pasta noodles and cook according to package directions until al dente, approximately 8-10 minutes.

Drain the pasta thoroughly in a colander and rinse with cold water to stop the cooking process and prevent sticking.

Transfer the cooled pasta to a large mixing bowl and drizzle with sesame oil, tossing gently to coat evenly and prevent clumping.

Add the olive oil to the sesame oil-coated pasta and toss again to create a well-distributed dressing throughout the noodles.

Stir in the thinly sliced carrots, chopped green onions, and fresh cilantro, tossing until the vegetables are evenly distributed throughout the pasta.

Season the salad with table salt and toss once more to ensure all ingredients are well combined and seasoned.

Taste and adjust seasoning as needed, then allow the salad to rest for a few minutes before serving to allow the flavors to meld together.
