Water-fried Chicken
This recipe comes from a former teacher of mine, Mrs. Watford, and provides an easier, alternative method of cooking chicken for those that want to eat a little healthier.

Pat the boneless, skinless chicken breast dry with paper towels, then season both sides generously with salt and pepper.

Bring water to a boil in a large skillet or shallow pan over medium-high heat.

Carefully place the seasoned chicken breast into the boiling water, ensuring it is submerged or mostly covered.

Reduce heat to medium and simmer the chicken, maintaining a gentle boil throughout cooking.

Check for doneness by inserting a meat thermometer into the thickest part of the breast—it should reach 165°F (74°C) internally. The chicken is ready when cooked through and no longer pink inside.

Transfer the cooked chicken to a plate and let rest for 2–3 minutes before serving, allowing juices to redistribute.
