Tender Pan-fried Chicken
In plastic bag, mix flour, salt, paprika, and pepper. Add 2 to 3 chicken pieces at a time and shake to coat pieces evenly. In large skillet, heat oil or shortening. Put meaty chicken pieces toward center and remaining pieces around edge.

Mix flour, salt, paprika, and pepper in a shallow bowl or plate, stirring until evenly combined.

Pat the chicken pieces dry with paper towels to remove excess moisture, which helps the coating adhere properly.

Coat each piece of chicken thoroughly on all sides by dredging in the flour mixture, shaking off excess.

Heat oil or shortening in a large skillet over medium-high heat until it shimmers.

Place chicken pieces skin-side down in the hot skillet, working in batches if necessary to avoid crowding.
