Ingredients

    crushed or diced tomatoes.

  • ˝ cup chicken broth

Preheat oven to 375°F. Pat the cut-up chicken dry with paper towels and season with salt and pepper on all sides.

Heat a large oven-safe casserole dish or Dutch oven over medium-high heat and brown the chicken pieces in batches, about 3-4 minutes per side, until golden. Remove and set aside.

In the same casserole, add the grated carrots and chopped garlic, stirring for 1-2 minutes until fragrant. Pour in the white wine and chicken broth, scraping up any browned bits from the bottom.

Add the crushed tomatoes, drained chickpeas, drained artichoke hearts, bulgur, fresh mint, and lemon peel to the casserole. Stir to combine evenly.

Return the browned chicken pieces to the casserole, nestling them into the mixture. Cover the casserole with a lid or foil and transfer to the preheated oven.

Braise in the oven for 35-40 minutes until the chicken is cooked through and the bulgur is tender.

Remove the casserole from the oven and place on the stovetop over medium heat. In a small bowl, whisk together the cornstarch and cold water to form a smooth slurry.

Slowly pour the cornstarch slurry into the simmering casserole while stirring constantly for 1-2 minutes until the sauce thickens.

Remove from heat and gently fold in the chopped fresh parsley and chopped fresh cucumbers just before serving, preserving their freshness and texture.
