Glazed Honey and Currant Chicken

Pat the chicken pieces dry with paper towels and arrange them in a single layer in a large baking dish or roasting pan.

Combine the red sweet wine, white vinegar, currant preserves, soy sauce, honey, and Dijon mustard in a medium saucepan over medium heat.

Stir the glaze continuously until the currant preserves are fully dissolved and the mixture is smooth and well combined.

Pour half of the glaze evenly over the chicken pieces in the baking dish, ensuring all pieces are coated.

Preheat the oven to 375°F (190°C) and place the chicken in the oven.

Bake the chicken for 20 minutes, then remove from the oven and brush or spoon the remaining glaze over the chicken pieces.
