Preheat oven to 375°F.

Pat chicken breasts dry with paper towels and arrange them in a single layer in a baking dish.

Drizzle 1 tablespoon of lemon juice over the chicken breasts, then season evenly with salt and black pepper.

Bake the chicken uncovered for 15 minutes, or until the internal temperature reaches 165°F when measured at the thickest part.

Remove the baking dish from the oven and sprinkle the crumbled feta cheese, chopped red pepper, and fresh parsley evenly over each chicken breast.

Drizzle the remaining 1 tablespoon of lemon juice over the toppings.

Return the baking dish to the oven and bake for 12–15 minutes, until the cheese is warmed through and the peppers are slightly softened.
