Cilantro Chicken with Peanuts
To cut back on sugar use plain peanuts instead of honey roasted. Use cabbage instead of rice for better fiber and general nutrition.

- honey-roasted peanuts (¼ cup)1 oz
- dried red chili peppers1 to 2 unitcrushed

- finely shredded napa cabbage or 2 cups hot cooked rice4 cups
Method

Heat roasted peanut oil in a large skillet or wok over medium-high heat until shimmering, about 1 minute.

Add chicken breast pieces to the hot oil and cook, stirring frequently, until cooked through and no longer pink in the center, about 5-6 minutes.

Stir in crushed dried red chili peppers and cook for 30 seconds until fragrant.

Add soy sauce, toasted sesame oil, and rice vinegar, stirring to coat the chicken evenly.

Remove from heat and fold in fresh cilantro leaves and honey-roasted peanuts gently until just combined.

Divide hot cooked rice or finely shredded napa cabbage among serving bowls and top with the cilantro chicken mixture.
