Pat the julienned beef dry with paper towels to remove excess moisture, which will help it brown properly when stir-fried.

Heat a wok or large skillet over high heat until very hot, about 1-2 minutes, then add a small amount of oil and swirl to coat the cooking surface.

Working in batches to avoid crowding the pan, add the beef to the hot wok and stir-fry for 2-3 minutes until browned on the edges, then transfer to a clean plate.

Return all the cooked beef to the wok and pour in the oyster sauce, tossing gently to coat the beef evenly.
