Ingredients

  • eggs
    hard-boiled, peeled, cut in half lengthwise
    4 unit
  • C. ripe avocado
    mashed
    1/3 unit
  • T. minced fresh cilantro
    1 unit
  • T. minced green onion
    1 unit
  • t. (or more to taste) minced
    seeded jalapeno pepper
    2 unit
  • t. fresh lime juice
    2 unit
  • t. kosher salt
    or to taste

Method

Halve the hard-boiled eggs lengthwise and carefully scoop out the yolks into a small bowl, leaving the egg white shells intact.

Mash the ripe avocado in the bowl with the egg yolks using a fork until the mixture reaches a smooth consistency.

Fold the minced cilantro, green onion, seeded jalapeno pepper, fresh lime juice, and kosher salt into the avocado-yolk mixture until well combined.

Taste and adjust seasonings, adding more salt or jalapeno if desired for heat and flavor.

Spoon or pipe the avocado-egg mixture evenly into each egg white shell half, filling generously.

Arrange the stuffed egg halves on a serving plate and garnish with fresh cilantro leaves if desired.
