Heat the butter in a large skillet or frying pan over medium heat until melted and foaming.

Add the green pepper rings to the hot butter and sauté until they begin to soften, about 3-4 minutes.

Stir in the chopped tomatoes and cook for another 2-3 minutes, allowing the vegetables to release their juices and flavors.

Reduce the heat to medium-low and stir gently and continuously, folding the eggs over themselves as they cook.

Continue cooking until the eggs are just set but still slightly creamy, about 3-4 minutes, stirring regularly to achieve a soft, curd-like texture.
