Preheat a grill or grill pan to medium-high heat, approximately 5 minutes until the cooking surface is hot and ready.

Pat the pineapple slices dry with paper towels to remove excess moisture, which helps them develop a better caramelized crust when grilled.

Sprinkle approximately ⅓ teaspoon of brown sugar evenly on one side of each pineapple slice.

Place the pineapple slices sugar-side down on the preheated grill and cook for 4–5 minutes until the sugar caramelizes and the pineapple develops golden-brown grill marks.

Flip the pineapple slices and sprinkle the remaining brown sugar on the now-facing-up sides, then cook for another 3–4 minutes until the second side is golden and both sides show charred edges.
